Any floating food will eventually cause swim bladder for your goldfish. Sinking pellets are always good to prevent swim bladder, and are better for your fish so they are not bloated or uncomfortable. Floating pellets are going to give it the longest chance to eat them but I don't find them to have as high a quality ingredients. We have 3 bettas (all in separate tanks) 2 with sand and 1 with gravel. The 2 with sand readily eat from the bottom if the pellets get by them.

My current approach is to feed floating during the day and sinking at night/dark - when the sturgeon are more active anyway.
